There is something about fresh strawberries in the summertime that feels like childhood. These easy strawberry popsicles with milk, (in my case, raw milk) are sure to cool you down this summer!

These Strawberry Milk Popsicles have become one of our favorite summer treats. They’re creamy, refreshing, and made with simple ingredients that you probably already have on hand. I love having a batch tucked away in the freezer for hot afternoons after working in the garden, long days spent outside with the kids, or those evenings when everyone wants a little something sweet before we wind down inside.
One of the things I appreciate most about homemade popsicles is knowing exactly what goes into them. Instead of artificial flavours and ingredients I can’t pronounce, these are filled with real strawberries and raw milk from our cow! Of course you can use store bought milk too.

Equipment you’ll need:
1: Popsicle mold. THIS IS THE ONE I USE. I’ve been using this mold for years and love it!
2: Wooden sticks. I get them in bulk and use them for crafts too! FIND THEM HERE

Strawberry Milk Popsicles

- Prepare your strawberries. If you're using fresh berries you can clean, cut and place in a bowl.
- Add at least 2 cups of water to the bowl of strawberries. This acts as the "juice" or "brine" for the strawberries to marinate in for at least 12-24 hours. It makes the end result so much more flavourful and refreshing.
- Add the berry mixture to the raw milk. A tip to save on dishes and time: if you keep your milk in gallon jars, just empty some out of one until its about 3/4 full. Or if you keep your milk in half gallons jars, do the math and divide your berry mix as even as possible.
- * if you're adding sweetener this is when you'll add it*
- Shake well and then pour into your popsicle mold. Because its chunky with the berries it's going to make a bit of a mess. I always pour into my popsicle mold with it sitting in the kitchen sink.
- Place the popsicle mold into the freezer and the remaining strawberry milk into the fridge. We love drinking the remaining strawberry milk too, it makes the best drink to add to your breakfast!
- *As you can see there's no blending or pureeing here. So the strawberry milk is chunky. We love it this way. But if you prefer a smoother texture (or if you want to use a straw to drink the leftovers) use an immersion blender once your strawberry milk is made. Just stick it in the jar and let it work its magic!
